Dear Mochajen: How long does coffee keep?
The general rule of thumb is that green coffee keeps for years, roasted coffee keeps for weeks, ground coffee keeps for hours and brewed coffee keeps for minutes. I always encourage fresh roasted coffee and grinding at home for the best end cup. Beans should be stored in a dry, airtight container to ensure protection from moisture and oxidation. Beans that have been stored for a long time first lose their aroma and then their flavor. In my opinion, roasted beans older than a month should be tossed (composted if possible).

Dear Mochajen: Why does coffee have caffeine in it?
Ok, you’re going to think I’m lying but I’m not. Caffeine is the coffee cherry’s natural insect repellent. This is evidenced by the difference in Robusta and Arabica beans. Robusta beans are hardier, can grow at lower altitudes and have more caffeine (hardier in part because they have more caffeine). While Arabica beans are more delicate, grow only at higher altitudes and have less caffeine (this should explain why they’re a bit more expensive).

Dear Mochajen: Gold filter vs. paper – what’s the difference?
A gold filter, being metal, has no chemical or physical effect on the hot liquid. While a paper filter can soak up some of the important oils that give coffee its flavor.

Dear Mochajen: How do I clean coffee stains out of mugs?
Try using coffee. The acids from the coffee will cut through the dried on brew. One way is to dunk a cloth in cold coffee and wipe the stains away.

Dear Mochajen: Does it really matter how I store coffee beans?
Oxygen, moisture and light are coffee’s enemies. Storing beans in a dark, cool, airtight place is the best way to protect their delicate flavor.
